The Viral Salad


INGREDIENTS

  • 4 carrots, grated

  • 2 large beets (boiled), grated

  • 2 cans chickpeas, drained

  • approx. 1/2 pack (about 1 cup) of quinoa, cook according to instructions

  • 1 cucumber, diced

  • 2 small red onions, sliced thinly

  • 2 Tbsp chopped basil (or mint and parsley)

  • approx. 1 dl crushed pistachios

  • 1 block of firm tofu, crumbled

IN ADDITION

  • Juice of 1 lemon

  • a drizzle of olive oil

  • black pepper

  • a little salt

PREPARATION

  1. Just mix all the ingredients!

Note: The small lemon slices in the picture are slices of a snack lemon, which I found in the store. It brought a nice flavor to the salad but is not necessary for the recipe of course
